Only one of my forums are showing up in the main menu. The rest of my forums are listed in my AdminCP page, AND they are NOT marked as hidden. Yet, they are not showing up. What do I do to fix this?

Sounds like you need to check your forum permission masks in the same area of your ACP as the list.
Click on permissions for each forum and make sure to tick the appropriate privileges you would like each user group to obtain (e.g. read topics, start topics, upload in topics etc.)
