Mine is currently set at 'the last 30 days'.

Is there anyway I can alter this, to either '90 days' or prefferably, 'from the beginning', without having to do it manually?

in the ACP
Manage Forums->The forum you want ->settings

look for this option : Default date cut off for topic display
Select Show All from the list of choices.
Click 'Edit This Forum'

repeat this for all your forums.
